Particularly for larger sites, what will the folder and file management strategy be in terms of organizing the assets of a site?

Our average is 8 web folders including 500 to 800 unique files...

Typical Server Folder Strategy:

Simple Website

• Backup
• Masters
  • Old Masters (first site design)
  • Received Art (from client and/or agency)
  • Purchased Art (including invoices, proof of payment to outside sources)
  • Scans (Any raw high resolution images before export)
  • Working Masters (Actual site design masters)
• WWW (Root directory for as many HTML files as possible; Search Engines)
  • Images
    • Headers
    • Photos
  • Nav
